Summers are always so jammed pack with activities…so many birthdays have been spent away from home.
This year there were no big plans…it was a Tuesday birthday so even more difficult to plan much.
All I wanted was to spend time with the ones I love but I don’t need a birthday for that 🙂
However, I guess the birthday gave me a good reason to go out to the Rio for some margaritas 😀
The Rio Grande is a Mexican restaurant that is currently only in Colorado (6 locations)…they have some good food but people go there for the margaritas 😀
There isn’t a three margarita limit for no reason! They call it “good things come in threes.”
Some of my favorites are the smoked chicken tacos, grilled steak tacos, guacamole tostada, chicken quesadilla or a smothered burrito.
The smoked chicken tacos are flavored with a chipolte lime sauce while the grilled steak tacos are topped with an ancho pepper sauce and corn salsa. The guacamole tostada is a very fresh and tasty choice.
Family, friends, fun, laughter, good food and fabulous margaritas…thanks to all who joined in on the birthday festivities!
