Cocoa Brownies

This is one of the simplest brownie recipes and they always turn out great! Brownies are usually made with cocoa or melted bittersweet chocolate. I have a good recipe that uses bittersweet chocolate as well but it just depends on what ingredients are in my cupboard.

Cocoa Brownie Ingredients:

8 oz. (2 sticks) melted butter
4 large eggs
1 c. sugar
1 c. brown sugar
1 1/4 c. cocoa
2 t. vanilla
1/2 c. flour
1/2 t. kosher salt

Preheat oven to 300 degrees. Start by melting the butter in a pot on the stove or in a glass measuring cup in the microwave. While the butter is melting beat the eggs in a medium-size bowl. I currently only have a hand mixer but a KitchenAid Mixer works great. Add both sugars and mix again.

After the butter has had time to cool, add it to the above ingredients along with the cocoa, vanilla, flour and salt. I usually just put a couple dashes of salt but if you like to measure I have included an amount. The addition of salt is very important…I love when you can taste the salt in brownies.

Grease the baking pan and then scrape the batter into it…I used a 13×9 1/2 in. pan. Place the pan on the middle rack in the oven. The brownies bake for about 20 minutes but I would check them after 10-15 minutes. If they look wet then they need more time. When they look done, place a toothpick or knife in the center…if it comes out clean then they are ready! If you use a smaller pan (making for thicker brownies) they could take up to 45 minutes to bake. I like my brownies gooey…in case you couldn’t tell by the picture! 🙂
